Strawberry, pineapple sage and beer ice cream

A wonderfull ice cream perfect with cake or just by itself. Very easy and no ice cream maker needed.

Ingredients

  • 400g double cream
  • 200g condensed milk
  • 1 cup and half of strawberries (frozen or fresh your choice)
  • 1 can (330ml) Happy Days© Pale Ale from Rascals (technically you'll need half for the recipe and half for yourself)
  • 20 pineapple sage leaves

Instructions

  1. Bring half the beer to a boil and then let it simmer for 15 minutes with the leaves of the pineapple sage.
  2. Add the strawberries, fresh or frozen and let it cook for 5 more minutes. Let it cool down. Let it sit for at least 12 hours in the fridge.
  3. Whisk the double cream.
  4. Remove the sage from the strawberry mix and blend.
  5. Mix everything together and add the condensed milk. Pour in a container and in the freezer for 12 hours.
  6. Enjoy.
