Pizza Dough


Pizza Dough

Yield: 1 large pizza
Prep Time: 15 minutes
Cook Time: 35 minutes
Additional Time: 14 hours
Total Time: 14 hours 50 minutes

A thick pizza bread dough.


  • 250g Strong Flour or 00
  • 130g Water
  • 16g Fresh Yeast
  • 5g Salt 
  • 7g Sugar
  • 15g Olive Oil


  1. Mix everything together, knead until the dough becomes smooth (about 10 minutes)
  2. In a bowl place the dough and leave it to rest overnight in the fridge under a tea towel.
  3. Take it out of the fridge an hour before using it, it should have doubled in size.
  4. Roll the dough directly on a tray with baking paper in the desired shape.
  5. Leave to rest one hour under a damp tea towel.
  6. Add all of your elements.
  7. Preheat the oven at 240C and put the kettle on.
  8. Cook for 35 minutes with a bowl of boiling water underneath.
